Thanks!<br />AmyAmyhttps://www.blogger.com/profile/13197805393703582708noreply@blogger.comtag:blogger.com,1999:blog-3314122516152889159.post-43294404033104610922009-12-12T08:12:50.628-06:002009-12-12T08:12:50.628-06:00i have some tips for veggie chili, tried and true!...i have some tips for veggie chili, tried and true! all of which stay within the "pantry cooking" limits.<br />1.DON'T drain the beans. the "syrup-y" liquid adds thickness to the chili which is missing when you make a meatless chili.<br />2. red beans are good, too. mixing them makes things interesting and colorful. plus red gives it that chili look.<br />3. use vegetarian refried beans, also for "heft". it is a really clever, effective way to "beef" up the chili. does wonders for the texture and you won't even know it's there. no one will say, "this taste like a tostada." acts sort of like cornstarch, if you will, to thicken up the "pudding".<br /><br />these are tips i got from Rachel Ray on her program, "30 Minute Meals." i served two carnivores and one of them did not even realize it was meatless until after his second helping when i TOLD him it was. he was really surprised! this is a guy who thinks TACOS are a SIDE DISH.
